Ingredients
  

For the Crust and Topping
  • cup granulated sugar
  • ¼ cup light brown sugar (packed)
  • 1 ½ cups all-purpose flour for both crust and topping
  • ½ tsp baking powder
  • ¼ tsp salt
  • 10 Tbsp chilled unsalted butter (cut into cubes)
  • ½ tsp pure vanilla extract
  • cup old-fashioned oats
  • ¼ tsp ground cinnamon for topping
For the Filling
  • 3-4 cups peeled (thinly sliced) apples (about 4 apples)
  • 1 Tbsp all-purpose flour
  • 2 Tbsp granulated sugar
  • 1 tsp cinnamon
  • 1 tsp lemon juice
For Serving
  • cup top-quality caramel sauce (plus more for serving)

Method
 

Preparation
  1. Preheat your oven to 350°F. Line an 8x8 baking pan with foil or parchment paper and grease it lightly.
  2. In a large mixing bowl, combine granulated sugar, brown sugar, 1 ½ cups of flour, baking powder, and salt; whisk to combine.
  3. Add the chilled unsalted butter, mixing until the mixture resembles coarse crumbs.
  4. Pour in the vanilla extract and oats, then add ground cinnamon; mix gently. Reserve 1 cup of this mixture for topping.
  5. Press the remaining mixture into the bottom of the prepared pan to form a crust. Bake the crust for about 10 minutes.
Filling Preparation
  1. In a large bowl, toss the thinly sliced apples with 1 tablespoon of flour, 2 tablespoons of granulated sugar, 1 teaspoon of cinnamon, and lemon juice until evenly coated.
Assembly
  1. Once the crust is set, layer the apple mixture evenly over the warm crust.
  2. Sprinkle the reserved crumb mixture over the apples.
  3. Bake for 30-35 minutes until the top is golden brown and the filling is bubbling.
  4. Allow cooling in the pan for 10-15 minutes, then lift out using the foil or parchment paper and transfer to a cooling rack to cool completely before slicing.
  5. Serve by cutting the bars into squares and drizzling with additional caramel sauce.

Notes

These bars can be served warm or at room temperature. They can also be garnished with chopped nuts or a sprinkle of cinnamon for an extra touch.
