Ingredients
  

For the Dough
  • 1 cup butter Room temperature
  • 1.5 cups sugar
  • 2 large eggs
  • 2.75 cups flour Spoon and level
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 0.5 tsp salt
For the Cinnamon-Sugar Coating
  • 0.25 cup sanding sugar
  • 1 tsp cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper.
  2. In a large mixing bowl, cream together the butter and sugar using a hand mixer or stand mixer until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. In another bowl, mix the flour, cream of tartar, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
Forming the Cookies
  1. In a small bowl, combine sanding sugar and cinnamon.
  2. Scoop portions of the dough and roll into 1-inch balls. Roll each ball in the cinnamon-sugar mixture until fully coated.
  3. Place the dough balls on the cookie sheet, spaced 2 inches apart.
Baking
  1. Bake for approximately 10 minutes, until edges are lightly golden and centers might appear underbaked.
  2. Allow the cookies to cool on the cookie sheet for a few minutes before transferring to a cooling rack.

Notes

To ensure cookies turn out perfectly, avoid overmixing the dough and use room temperature butter.
