  • 1 pound Italian sausage, casings removed Choose sweet or spicy based on preference.
  • 2 to 4 tablespoons olive oil Used for browning the sausage.
  • 3 to 5 cloves garlic, finely minced or pressed
  • 1 teaspoon oregano (optional) For additional flavor.
  • 1 14.5-ounce can petite diced tomatoes Including juice.
  • 2 1/2 cups water
  • 2 cups penne pasta Can substitute with any pasta of choice.
  • 1/4 cup sour cream Adds creaminess to the dish.
  • 2/3 to 3/4 cup freshly grated Parmesan cheese For garnishing.
  • 1/2 cup fresh basil, chiffonaded
  • to taste freshly ground black pepper

Method
 

Cooking
  1. In a large skillet or pot, heat over medium-high heat and add the Italian sausage with 1 to 2 tablespoons of olive oil.
  2. Crumble the sausage while it cooks to ensure even browning.
  3. Once the sausage is golden and cooked through, add in the minced garlic and optional oregano. Stir for a minute until fragrant.
  4. Mix in the diced tomatoes (with juice), water, and penne pasta. Stir until well combined.
  5. Reduce heat to medium-low, cover, and simmer for about 15 minutes, stirring once halfway through.
  6. When the pasta is al dente and most of the water is absorbed, turn off the heat and stir in the sour cream.
  7. Fold in the grated Parmesan cheese, chiffonaded basil, and ground black pepper to taste, mixing gently.

Notes

Serve immediately with extra Parmesan or basil on top. Can drizzle with olive oil for added flavor. For best results, use high-quality sausage and adjust seasoning as per taste.
